You can set up SLAs easily by configuring the benchmark hours for completing a request in the Workflow Properties screen as shown below.
You can visually identify the workflows that are within your SLAs, the workflows that are close to breaking your SLA and the ones that are delayed. This can be accessed from the Workflow Analytics screen.
You can drill down and identify the process stages that are delaying your workflows.
